This simple salad will provide you with nearly half of your folic acid requirements for the day!

Ingredients:
1 can Pinto or Lima beans or1 1/2 cups cooked dry-packaged Pinto or Lima beans1 cup cauliflower florets1 cup chopped red bell pepper1 small avocado, peeled, pitted, cubed2 green onions and tops, sliced1/2 cup fat free sweet and sour dressing4 cups baby spinach leaves1 can Mandarin orange segments, drained or1 fresh orange, peeled, chopped2 tablespoons toasted sunflower seeds

| Instructions: |
| Combine beans and vegetables in salad bowl; pour dressing over and toss. Add spinach and oranges and toss. Sprinkle with sunflower seeds. |
