It is a pure & simple cane sugar alternative produced from the sweet juices of tropical coconut palm sugar blossoms.
Coconut sugar has long been a staple for south East Asian culinary heritage and herbal medicine.
Collected from high atop the coconut tree where the sweet nectar is harvested by gently slicing the flower.
The nectars are kettle-boiled into a thick caramel and ground to a fine crystal.
